Skate are in the ray family and have a pronounced but mild flavor, quite similar to scallops. With firm flesh and a high collagen content, skate have a unique texture when cooked becoming off-white from their characteristic pink and beige gradient before they are cooked. Cooking Tip: Do not overcook Skate or Ray, as the flesh will separate along the striations.
